How to cook:

  1. In a deep and large skillet, heat 2 tbsp olive oil then add salami and using low heat, cook and stir salami for about twenty minutes until its fat escapes and it is tender.

  1. Whisk the egg yolks in a medium-sized bowl with the cup of cheese and the rest of the olive oil.

  1. Add the pasta and reserved water and cook by tossing it for about two minutes. Remove the skillet from the stove and add the egg mixture right away and the remaining reserved cooking water. Toss the pasta until you achieve a creamy texture for about a minute or two, then season with salt and pepper and serve in shallow bowls.
